Almond Jelly with Fruits

Ingredients
- 2C (250mL)
Bonsoy Soy Milk
- 3Tbsp
Spiral Foods Organic Rice Syrup
- 2 tsps (4g)
Spiral Kanten (Agar) Flakes
a few dashes of almond essence (if available)
Syrup for Jelly
- 1C
Cold water
- 4Tbsp
Spiral Foods Organic Rice Syrup
- 1Tbsp
Lemon juice
Seasonal fruits (strawberries, watermelons, oranges, pineapples, kiwis, blue berries, persimmons, nashi pears, apples), cut into small dice or sliced mint leaves for garnish

Sprinkle the agar Flakes in 1 Tbsp water and soak for about 10minutes.

In a pot, add the almond milk, rice syrup and soaked agar, heat and stir well until boiling and the agar is diluted completely.

Strain it to a mixing bowl, cool down in room temperature (If there’s a lot of agar flakes left, warm again and strain well). Add almond essence if desired.

Divide it into cups and cool in the fridge after they set in the room temperature. To make syrup, mix water and rice syrup or agave nectar and lemon juice to adjust sweetness. Place your choice of sliced fruits and pour the syrup over it, garnish with mint leaves and serve.
