Watermelon Balls with Chia Jelly

½

small watermelon

1 can (320mL)

Bonsoy Sparkling Coconut Water (Watermelon)

4Tbsp

Chia seeds

2-3Tbsp

Spiral Organic Rice Syrup

mint leaves for garnish

    Method

    Scoop out watermelon balls using a melon baller (as many as you can). Keep the watermelon to use as a bowl.

    In a mixing bowl, mix with chia seeds and the sparkling coconut water, stir well and leave for about 15 minutes until the mixture thickens. Add rice syrup and stir well.

    Layer watermelon balls and chia jelly in the bowl. Garnish with mint leaves.
